Salmon Burger

Summer meals are all about the grill! If you’re tired of the traditional fare of hot dogs and hamburgers, change up your dinner plans for the rest of the season. Fire up the grill and test these new ideas!

Who says the only main dishes you can make on a grill are the ones topped with ketchup and mustard? Prepare something new tonight that your whole family will love, like eggplant parmigiana, salmon burgers, or even pizza! For side dishes, toss up a grilled salad, mix up grilled polenta, or bake some potato skins.

Grilled Skillet Peach Pie

When it comes to dessert, the grill can be your friend there, too! Try a pineapple berry “hobo pack” or even bake up an entire grilled skillet peach pie! Be creative and try your hand at grilling bananas, apples, and pears in any combination or by itself with spices like cinnamon and nutmeg.

Tonight, when the kids ask, “What’s for dinner?” you can surprise them with something new and exciting, fresh off the grill!

Now that summer is upon us, I have my grilling supplies on full alert. Every dinner, in my opinion, should be eaten outside with food from the grill. And with a brand new grill on my porch, I’m ready to get started.

Vegetables are great on the grill, but there are a few stand-out veggies that have become staples at our house including asparagus, corn, eggplant, mushrooms, peppers, zucchini and onions. My best investment is a cheap little grill basket that I use on most days during the summer. Simply cut up your favorite vegetables (chunky cuts work better), coat with olive oil and spices, and place the basket directly on to your grill – stir often. Serve with chicken breasts or salmon (also from the grill).

The only thing more exciting than the warm weather and the chance to be outdoors in the Twin Cities this week is that the TWINS are going to be outdoors for the first time in 30 years!  It’s all the talk these days with the home opener set for Monday, April 12 and another game on Wednesday, April 14 (weather permitting!)

But even as our thoughts turn to outdoor baseball, cleaning around the yard and being in the warm fresh air again after a long winter, it is even more exciting to think about warm weather foods – like salads, grilled meats and spring produce.

A personal favorite of mine is marinated asparagus.  This dish is equally suited to an elegant dinner party as it is for a portable picnic – the likes of a pre-game tailgate for our hometown Twins!  So knock one out of the park with this recipe, while taking advantage of this seasonal vegetable and low prices.
