Patriotic Pudding Parfaits
June 29, 2010 by DeAnn
Parades, fireworks, and cookouts are an Independence Day staple! What are your plans this Fourth? Whether you are getting together with family or spending a quiet day at home, why not try your hand at this patriotic dessert to honor our dear country? I came across this recipe on the Easy Eats section of CobornsDelivers.com, and appreciate its simplicity. With fresh strawberries and blueberries, almonds, and a touch of mint, this light and refreshing treat is the perfect end to any meal. Can you think of an easier (or more tasty!) way to pay homage to the red, white, and blue?
|PREP TIME: 15 Minutes
|COOK TIME: No Cook Time
2 oz. Almonds, sliced
1 pkg. (3 oz.) Instant Vanilla Pudding
Milk to prepare pudding
1 cup Strawberries, chopped
1/2 cup Blueberries
Mint Leaves for garnish
Whipped Topping (optional)
1. Set oven to 350 degrees Fehrenheit. Arrange almonds in single layer on sheet pan and toast for 5-7 minutes or until almonds begin to brown.
While almonds are toasting, prepare pudding according to package directions. While pudding is setting, chop about a cup of strawberries.
2. Once pudding is set, fill glass with alternating layers of pudding and fruit. Top with toasted almonds and garnish with mint leaves, if desired.
Whipped topping can be added, as well, as an addition/variation to this Easy Meal Idea.
