Summer is the time for get-togethers. Family reunions, high school reunions, cookouts with neighbors, and company picnics go non-stop from June to September. I’m not complaining! I love spending time with my family and friends, many of whom I don’t get the chance to see very often with our differing schedules.
I also like the opportunity that I get to try my hand at a variety of recipes to accompany me to the picnic table. Hot dogs, hamburgers, chips, and veggie plates are wonderful, but I’m looking for something new and exciting this season – What do you think about these creative concoctions?

1. Cut bread in half lengthwise and remove top of baguette. Scoop out inside of bread from top of baguette. Spread mayonnaise along top and bottom of the baguette. Put top back on bread and cut 1 1/2″ – 2″ slices. Separate tops from bottoms.
2. On bottom portions of baguette, layer green leaf lettuce. Next, layer cooked bacon to cover lettuce. Then, layer sliced cherry tomatoes and place tops of bread back on sandwiches. Serve.
I know that summer is in full swing by the number of gatherings taking place! Every weekend is another chance to reconnect with distant relatives, former colleagues, and new acquaintances. In the coming weeks, I hope to use these unique recipes to make more memories and more friends!
